Ikigai is a cuisine full of synergy and wellness without losing the core values of flavour, technique, and time. Celebrating blue zone cuisine, James, and his team re imagine cuisine styes from the five leading countries that embrace food as a medicine and have longevity in life through diet and lifestyle. Food isn’t just fuel it needs to have a balanced effect and be beneficial to your body. The restaurant embraces cooking styles, produce and sustainability at its core, transparency, provenance, and quality lie at the heart of ikigai cuisine and can be seen in the details and balance of its plates. Staying away from refined sugars and harmful oils, Ikigai uses alternatives and natural given products to create an innovative, small plate menu that changes with the seasons and mirrors its surroundings.
